Changing Programs After Conditional Acceptance

Hi I'm currently in gr. 12 and planning to apply to UBC, SFU, Langara and maybe BCIT for post-secondary, pretty much most post-secondary schools out there in Vancouver. Thing is I'm pretty much still undecided about what I want to do in life or even what field I want to go into so I really don't know what to apply for. Let's say I applied for Science at UBC and received conditional acceptance. After that, could I change my program to let's say.. Arts or Engineering or something? Or do I have to wait like 1 whole year at UBC before I can change departments. What about for SFU and BCIT? Since I don't know what I want to do in life yet, I don't want to apply for something that I might not want to do later.
